Only five ingredients! So rich, so decadent, so quick to make. You won’t believe that the magic ingredient is avocado – what a pleasure it is to combine the natural creaminess of these beautiful pears with the dark intensity of cocoa. This pudding is densely creamy, almost mousse-like….
Soft & Light Grain-free Bread
Just what the name says! Soft & light, satisfying & nourishing, this lovely little loaf is studded with seeds & packed with goodness. It’s soft & springy when fresh, slices like a champ, toasts beautifully & even freezes well. I love the simplicity of this recipe – mix everything in a big bowl then bake it. No waiting round for yeast to rise, no blender or blitzing, just the enjoyable art of mixing by hand….
Black Bean Chips
Revved–Up Overnight Oats
Breakfast: the rush, the schoolbags, the lunchboxes, the clock ticking, someone’s lost shoe, the need to eat on the run… This has been my go-to breakfast for the last few weeks – and a lifesaver. The trick: throw the ingredients together the night before, let it soak, throw on any toppings in the morning & eat. That’s it. No cooking.
Why revved-up? Because I’ve added maca (that earthy, almost caramelly Peruvian root) for a natural superfood boost, and cacao, because chocolate deserves a place at every meal. Even though I’ve written measurements, this is a fully flexi recipe that I urge you to play with. Swap or bump ingredients. Make it yours….
Toasted Almond Cakes with Creamy Almond Frosting
These are light & creamy little cakes with a hint of sweetness. Smooth coconut milk & the lightness of brown rice flour & almond meal are a lovely complement to the crunch of toasted almonds. These are wonderfully low fructose treats – a smidge of maple, alongside bursts of sweetness from the raisins.
I’ve included two frosting options – one using ricotta, the other dairy-free – both creamy & delicious, the perfect compliment to these delicate wee cakes….

Tofu Scramble Spiked with Lemon & Coriander
Green Goodness Hummus
I ummed & ahhed over this, dear reader – is it hummus? Is it tapenade? Pesto, almost? Either way, this smooth green dip is a nifty way to get more greens into your belly – and it’s a great way to use up those random leftovers like cooked broccoli & chickpeas. I’ve been merrily munching it all week, liberally splodging it on my nut & seed crackers (have you tried my cumin pepita crackers? Sooo simple! Recipe here. Or for the crunchy caraway version, click this one!! I always make a double batch) The olives give a salty little kick to this brilliantly green, chlorophyll-rich, almost creamy, soft spread….
