Strawberry season! Yesss! The colour, the sweetness, the juiciness, the way they seem to sing alongside the slight saltiness of nut butter… This was one of those whimsical ‘throw it in the blender and see what happens’ recipes which quickly became a family favourite. The maca will keep you going, the chunky nuts will fill you up & the gorgeous rosy hue will put a smile on your dial….
Black-Eyed Bean Crackers
Salty, crunchy, delicious! Making your own crackers is so rewarding – you can guarantee that the ingredients are coeliac-safe, they’re cheap & easy to make, plus you can easily personalise them: if cumin seeds aren’t your thing, simply swap them for a different flavour, like caraway or garlic granules. These protein-packed little numbers are crispy & more-ish….

Cute Cucumber Canapes
This is a perfect everything-free platter idea for a shared meal. Colourful & bright, it ticks all those intolerance boxes – no dairy, nuts, eggs, grains or gluten – plus it’s light & fresh, which can be lovely alongside the more traditional shared-food fare. Hands up if you’ve been the only one proffering vegetables amidst a tide of wheat, dairy & sugar!…
Chunky Chickpea Curry
Quick to assemble, this is a deliciously chunky & nourishing one-pot-wonder. It’s also a fairly flexible recipe – if you’ve run out of chickpeas, try another tinned bean (in the photo, I’ve used chickpeas & organic adzukis) Once, I swapped the carrot for some cooked broccoli, since that was what needed eating in the fridge, and it was lovely. If you’ve got cooked veges ready to go, this curry can be whipped up pretty quickly….

Traffic Light Chia Puddings
I hadn’t intended to make traffic light puddings, but then I realised I’d used red, orange & green…in that order… This makes two cute little breakfast puddings. I use coconut milk, because I love the depth of creaminess, but I also find the healthy fats satiate me more than just rice or almond milk. Feel free to use whatever fruit you have at hand. Chia pudding is wonderful with berries, banana, stewed apple. pear, grapes……
