Nope, it’s not a smoothie bowl – this is activated cashews, almonds & sunflower seeds blended with a banana, coconut milk & almond milk, to form a smooth, filling, thick, grain free almost-porridge-like concoction. Packing a protein punch, it’s a deliciously quick breakfast to throw together. If you soak the nuts/seeds the night before, in the morning it’s a simple blitz & you’re good to go.
If you’re feeling fancy, there are all sorts of additions you can make. In the image above, I stirred through my beloved Misty Day Plant Potions to form the unicorn hues (these are a range of beautiful plant-based powders developed by a qualified nutritionist/herbalist here in New Zealand www.mistydayplantpotions.co.nz) The flavours from the brews were sensational – I loved the warm hint of ginger in the blue Cosmic Brew, but I think my favourite was the delicate rose notes of the Pretty Brew. The other two were Detox Brew & Moxie Brew, giving the dark grey & purple tones.
Below the recipe are two more pictures – in one bowl, I’ve added a teaspoon of beetroot powder, which not only gives the lovely pink hue, but is also rich in antioxidants & minerals. The final photo is an oldie, but it shows you what the whip looks like with no powders or additions at all!
You don’t have to use coconut milk – you could swap it for milk of your choice – but I find the healthy fats of coconut fill me up & sustain me for longer. Plus you can’t beat that creaminess.
½ cup cashew pieces (cheaper than buying whole cashews!)
¼ cup sunflower seeds
¼ cup whole almonds
1 banana
1/3 cup coconut milk
1/3 cup rice or almond milk
optional extras for serving, like chia seeds, fresh fruit, yoghurt…
Put the nuts & seeds in a bowl, cover generously with water and soak for several hours, or overnight.
Drain well, then place in a food processor/blender/bullet with the banana and milks. Blitz until smooth.
Serve with fresh fruit, a sprinkling of chia, yoghurt or splash of milk. If you’d prefer it sweeter, drizzle some honey, maple or apple syrup on top.
Depending on how hungry you are, this makes a couple of meals – it stores well in the fridge for a couple of days, giving you an easy go-to breakfast.
