Naturally vegan & gluten free, these taste better than the real thing – by dodging all those processed additives, the natural ingredients are allowed to truly shine.I’ve been making these bars for years, using a recipe from Hannah Horton’s ‘Health Yeah’ website (fantastic Kiwi wholefoods recipe site, click here) but this time I wanted to make them even more magical by adding an awesome product I’ve just discovered: Cosmic Brew, by Misty Day Plant Potions (website here). This stunningly vibrant blue powder includes blue spirulina, tulsi & a little ginger. Dreamy. The bounty bars are lovely whether you choose to make them blue or not.
Hannah’s website gives great step-by-step photos too. Here’s the slightly tweaked version of the recipe I used:
2 cups desiccated coconut
1 cup coconut milk
3 Tbsp coconut oil
4 Tbsp pure maple syrup
1 Tsp vanilla extract
A pinch of sea salt (helps get all the natural flavours out of the coconut)
1 heaped Tbsp Cosmic Brew
250g vegan dark chocolate
In a saucepan, mix the coconut milk, vanilla, coconut oil & maple. Heat gently over a low element, stirring until it is well blended and dissolved. Stir in the desiccated coconut. Take off the heat & stir in the Cosmic Brew, if using. Spoon this mixture into a container lined with baking paper and press firmly down. Cool in the fridge until firm. When set, cut into bites/bars and then place in the freezer to completely harden. Gently melt the chocolate – I put the chocolate into a bowl over a pot of water & heated it over a low flame. Using a spoon and a bit of skill, cover your cold coconut squares with melted chocolate. Store in the fridge & enjoy!
