As the weather cools down and the days get shorter, I’m all about comfort food. And for me, this isn’t only about homely, hearty nourishment, it’s also about more simplicity, less fiddle. This grounding, earthy lentil stew requires only one pot, and it’s brimming with flavour. Serve it on its own, with mashed potatoes, on rice…or as my teenager likes to do, stuff it into a toasted sandwich for breakfast!

I’ve been making chickpea fritters for years, always blending the batter with vegetables then frying them, but it’s taken me this long to discover socca, the European traditional flatbread. Since socca doesn’t have an overwhelming taste of its own, it’s a perfect blank canvas for loading up with flavour.

I enjoy the traditional ritual of spooning hot liquid into the rice mixture, but when I don’t have time to stand around stirring, I love this easy oven baked method. If you don’t have or like fennel, swap it for another seasonal herb. Lemon is a real flavour star here & will go well with everything….
Delicious Pizza Bases
This is a true silver linings recipe for me: had my daughter not been diagnosed coeliac, I would probably still be making pizza dough out of wheat flour, and missing out on the tasty combination of these nutritious flours. The resulting pizza base is crispy, golden & delicious, and so much better for my family. The bases also freeze well – I keep a stash of small ones in the freezer, waiting to be turned into school lunches….
Super Simple Dhal – updated
This is simple, nourishing, protein-packed comfort food, which can be whipped up super fast. The only spices are warming cumin & turmeric, though chilli is optional if your tongue needs a tingle. Spiced onions & garlic are introduced to lentils & beans, then coconut milk marches in and captivates them all with its magical creamy touch….
