Everyone needs a trusted chocolate cake recipe up their sleeve, right? This one’s a winner because it ticks many allergy-friendly boxes – naturally free of dairy, gluten, nuts & eggs – which makes it perfect for sharing. Oh, and did I mention it’s easy to make, moist, delicious, versatile & chocolatey? AND the recipe translates well to cupcakes & baked doughnuts!
…Light, sweet and ever so slightly chewy, these lil treats are super fast and easy to make. Like thumbprint cookies crossed with macaroons, they’re made with only a handful of ingredients, including coconut, a little maple, coconut milk & brown rice flour. I love the simple, imperfect, rustic nature of them, how the dough is dolloped onto the baking tray & a little jam or a fresh berry is popped on top.
…When I first served this to the family, my 10 year old daughter spluttered, through a mouthful, “omigoshbesttartever” She went on to have another two slices. Kids can been your harshest critics, so this was high praise indeed. She then also said “if you served this tart at my birthday party, I’d be really happy”. You’re on, Trixie! This may look like a raw tart but it’s actually a simple baked not-too-sweet pastry base, with a chilled, jelly-like, soft filling. No special equipment is needed here – mix the base in a bowl, simmer the filling in a pot, that’s it.
…Simple to make & deliciously light to eat! With only a handful of ingredients, these crispy little biscuits are naturally sugar free, vegan, packed with nuts & seeds and make the loveliest light cookies for ice cream sandwiches.
…I was trying to meditate one evening, but my monkey mind kept wandering off & I found myself thinking about trialing a fruity loaf spiked with ginger. The next morning, my daughter got up & said “I dreamed about trying to make a ginger fruit cake!” That was it. Game on! This simple little loaf is quick to make, satisfyingly spicy & delicious when eaten warm & fresh.
…Healthy, nutrient-dense, plant-based, perfectly rich & soft! It’s no secret that I’m a tahini freak – I’m in love with its mineral-rich creaminess – and I’m also in love with plant protein and the endless creative ways it can be added to our diets. This recipe is a classic example – black beans form the bulk of the truffle, complimented sweetly with a little maple, nut butter and of course, cacao. The other star of the show is sesame (tahini’s origins!), which adds a toasty, nutty, crunchy, warmth.
