Free from dairy, refined sugar – and of course, gluten – these cute wee cookies are a perfectly simple marriage of fruit and nuts. Once blitzed and baked, they are delicately sweet & nutty – and the extra burst of dark chocolate on top lifts them to next-level good!…

Chickpea Choc Bombs
Yes you read that right – chickpeas! I’m always keen to sneak extra protein into a dish, and I was intrigued to experiment with chickpeas in a sweet context. I love black bean chocolate brownie, so it made sense that other legumes could translate well into a sweet treat. These little choc bombs are fudgy, soft, rich and not too sweet. Topped with dark chocolate & sprinkled with festive toppings, these fudgy fridge treats make a lovely home-made gift….
Aquafaba Chocolate Mousse
You could’ve knocked me over with a feather the first time I tried aquafaba meringue – “really? This is the liquid from a can of chickpeas?! No way!” Yes way. Aquafaba literally means ‘bean water’ and in some cases, it can expertly mimic the function of egg-white. There are only three ingredients in this recipe – dark chocolate, chickpea brine & vanilla. The mousse is light, foamy, soft, chocolatey airy & utterly moreish….
Strawberry Macadamia Chia Parfait
I’m so excited that strawberry season is finally here! The little patch in our garden is merrily flowering (which reminds me, I must put netting over them before the birds start eyeing them up) so today I started the day with a rosy glow, thanks to this strawberry macadamia chia parfait (with a lopsided but well-intended heart..!) This is a nutrient-dense & delicious blend, which is hearty enough to be breakfast. The chia & nuts give it protein power & density, and if you add coconut milk, the healthy fats will keep you satiated longer. It’s like a healthy strawberry thickshake with a bonus hit of vanilla chia pudding at the bottom….

Toasted Almond Cakes with Creamy Almond Frosting
These are light & creamy little cakes with a hint of sweetness. Smooth coconut milk & the lightness of brown rice flour & almond meal are a lovely complement to the crunch of toasted almonds. These are wonderfully low fructose treats – a smidge of maple, alongside bursts of sweetness from the raisins.
I’ve included two frosting options – one using ricotta, the other dairy-free – both creamy & delicious, the perfect compliment to these delicate wee cakes….

Super Simple Plum Tart
I impulse-bought a big box of organic omega plums – beautifully dark-fleshed with enough acidity in their speckled skins to make you shudder with tart delight. So for the last couple of weeks, we’ve been munching merrily on plums, but our family favourite is this super simple pudding (is it a tart? Is it a cake? You decide) The first time I created it, we wolfed the lot in one guzzly sitting. The zing of the plums is offset by a very basic & not-too-sweet soft base….
