Super-simple to make, naturally vegan & gluten free, not too sweet, spiked with fresh orange! There’s a lot to love about this simple little loaf. It livens up any lunchbox & has deliciously chewy edges.
This recipe doesn’t include the icing pictured here – the loaf is delicious on its own – but if you want to whip up an unexpectedly nutritious frosting, try my Chocolate Sweet Potato Whip (to personalise it for this loaf, try swapping some of the milk for orange juice, to really make those the zesty citrus flavours sing!)
Orange Choc Chip Loaf recipe:
¾ cup rice milk (or milk of choice)
2 tsp apple cider vinegar or white vinegar
1 ¾ cups all purpose gluten free flour blend
2 tsp baking powder
2/3 cup coconut sugar
¼ tsp salt
¼ cup gluten free chocolate chips
1/3 cup (olive) oil
zest & juice of one large orange
Preheat the oven to 175C. Grab a loaf tin – mine is smallish and silicon, measuring 10 x 22cms – and grease it lightly.
Add the vinegar to the (rice) milk and set aside while you prepare the other ingredients.
In a mixing bowl, combine all the dry ingredients. Then add the wet, including the vinegared milk.
Bake for 40-50 minutes on the middle rack of the oven, until golden (poke in a clean knife or skewer to check if it’s cooked) Leave to cool in the loaf tin for 10 minutes before transferring to a rack to cool.
