I love my chia puddings, but this time I tried something totally different, from both the ingredients to the method. Instead of simply soaking chia seeds, I blitzed & blended them with plums, coconut water and….sauerkraut! Yes! The tartness of the plums perfectly compliment the juicy zing of the ruby red ‘kraut. If sauerkraut isn’t your thing, don’t worry – plum is still the dominant flavour, but I like knowing that an extra dose of probiotic goodness has snuck into my breakfast. The resulting texture is a cross between a jelly & a mousse. Thick but not heavy. Tangy with a hint of sweet. Yum.
I decorated these breakfast glasses with a spoonful or two of regular chia pudding (chia seeds soaked in coconut & rice milk), a wee squirt of coconut yoghurt (again, great tart flavour!) and a sprinkling of pomegranate arils.
2 big plums
1 tsp sauerkraut (I love Be Nourished ruby perfection ‘kraut)
2 Tbsp chia seeds
½ cup coconut water
Blitz all ingredients in a bullet or high speed blender until combined. Pour into serving glasses & pop into the fridge to set. (minimum of half an hour – I usually make it in the evening, ready for breakfast in the morning) This will yield enough for two small glasses or one large. Feel free to double to recipe as needed.
